Bushwick may be on the way to becoming a New York City brewing hub once again. Tomorrow is the grand opening of Interboro Spirits and Ales, a new brewery, distillery, and taproom on Grand Street in East Williamsburg. The triple threat space is a first in its own multipurpose category, but since Kings County Brewers Collective set up shop on Troutman Street over the summer, Interboro is the second brewery to open in the area this year.

Interboro produces not only beer but also gin, whiskey, and amaro, a type of bitter herbal liqeur, on site. Co-owners Jesse Ferguson and Laura Dierks have been working together to get Interboro off the ground for the past two years. After securing the location last October, they recently wrapped construction and began their first brew in July.

One can already find Interboro beers on draught in local beer-focused bars in the area such as The Well and The Sampler, but on Friday, September 9, the Interboro taproom and brewery will officially open to the public. At the taproom, patrons can enjoy a larger selection of Interboro beers and spirits and can join a tour of the production facility.

Ferguson tells Bushwick Daily that he and Dierks hope to “break down the arbitrary barriers that have been set up between spirits and beer and make products. that blur those boundaries— so people realize it all starts in the same place.”

To achieve their goal, they will serve drinks that showcase the unique flavors of these alcoholic beverages while also seeking ways to emphasize the common flavor notes that can be found across the spectrum of fermented and distilled creations, from beer to cider to whiskey to gin, to educate their patrons about what they are drinking.

Interboro is located at 942 Grand Street between Waterbury Street and Morgan Avenue off of the Grand Street L train stop, and the taproom will officially open its doors to the public on Friday, September 9 from 6 p.m. until 10 p.m.

This weekend, Interboro will be open on Saturday, September 10 from noon until 8 p.m., and on Sunday, September 11th from noon until 6 p.m. They will then close again until the following Thursday, September 15th.
