In March we informed you that new, long-awaited restaurant, Faro was slated to open at 436 Jefferson St in Bushwick. Faro’s rep just informed us that the restaurant is officially opening its doors to patrons tonight, May 6, and will feed them with the abundance of seasonal American menu items with a special focus on housemade pastas, sustainable local seafood and Animal Welfare Approved meats.
Faro is a passion project of Chef Kevin Adey (formerly of Northeast Kingdom) and his wife Debbie Adey (ex Jean Georges) who together with partner Daniel Blumberg, are determined to bring an airy, comfortable and affordable yet ambitious neighborhood restaurant to Bushwick’s burgeoning dining scene.
We are excited to report that Faro’s menu is very affordable with pastas starting at $11 and no dish over $20 (including entrees). Some of the highlights include: Sweet Pea Porridge with local grain, morel mushrooms and whey; Dandelion Greens with sunflower-crusted chevre and garlic confit; Green Garlic Lumache pasta with poached egg, fiddleheads and fava beans; Grano Arso Stracci ‘burnt’ flour pasta with morels, rosemary, parmesan chili pangrattato; Brandade Raviolo with spring onion, egg yolk; Gnocchi Sardi with kid goat, leek and artichoke; Wood Fired Porgy with peas, bottarga and emmer; Murray Gray Strip Loin with silage roasted potatoes (a fermenting technique used to store grass over the winter for farm animals – Kevin will roast potatoes in the grass in Faro’s wood fired oven).
As far as the beverage program goes, expect American craft beers, seasonal and classic cocktails and wines from around the globe.
Interestingly, the restaurant is located in a space, which formerly served as a storage warehouse for MoMA art works.
