Sol Sips, Once a Vegan Pop-Up, Becomes a Permanent Restaurant in Bushwick Tomorrow

A vegan pop-up in Bushwick will become a permanent restaurant tomorrow.  

Sol Sips, a pop-up which has been wintering for the past three months at Millie’s Cuban Cafe at 203 Wilson Ave., will host a grand opening on Thursday to celebrate the transition to a full-time vegan resto. 

One of the noteworthy changes at Sol Sips will be a farm-to-table Saturday brunch menu priced at a sliding-scale, which lets you pay what you can afford (between $7 and $15) for a full meal.

The vegan spot has also bolstered its menu, adding such dishes as chickpea omelettes ($10) and avocado-mushroom melts ($10). You can also try the Bushwick water ($6), a drink made of mineral water, basil, and pomegranate juice.

The owner and head chef at Sol Sips is 21-year-old Francesca Chaney, who is also a vocalist and a student at Brooklyn College, according to the GoFundMe page Chaney has set up to help raise more money for expanding Sol Sips.

In December, we reported that Millie’s, which is run by local restauranteur Danny Teran, was slated to reopen in the space this spring; but while Sol Sips was doing the pop-up, Teran relocated the Cuban restaurant to a larger location up the street at 151 Wilson Ave. 

Millie’s will reopen in early May with plans to open a second and third location in Manhattan.
