Accessible fine dining farm to table restaurant Faro has given its patrons another reason to love it: Chef Kevin Adey and his talented team recently launched a tasting menu, which is now available every weekend.

Faro has received plenty of well-deserved attention since it opened last May, including a favorable Michelin rating. Adey, formerly of Northeast Kingdom, another farm to table neighborhood favorite, has been slowly incorporating new elements into his menu, such as brunch, which launched in October. Adey tells Bushwick Daily that the tasting menu “was always a goal,” but he needed to be sure he had restaurant running smoothly before undertaking the feat of “adding 33% to the menu on the two busiest nights.”

The tasting menu, which debuted two months ago, is offered on Fridays and Saturdays, with only 6 reservations available per evening. It’s a singular experience: Guests are seated at the kitchen bar where they watch Adey and his team masterfully prepare their meal. Each of the two amuse-bouches, five pastas, and the dessert are served and described by Adey himself.

The menu changes weekly based on what is available and what inspires the chef. Many of the longer-lasting menu items will have started out on the tasting menu. While the standard menu still features unique, rare, and unconventional options, the tasting menu is “a deep exploration into micro-regional Italian pasta.”

The eight course dinner costs $85, and it does not disappoint. Arrive on an empty stomach to fully savor every bite of this entire experience. You will leave full, happy, and having learned about the Italian culinary tradition and modern farm to table cuisine. The very limited seats fill up quickly; it’s advisable to reserve well ahead of time.
