Today we bring more news regarding yummy Vietnamese eats in the 'hood and are smitten to announce that, by popular demand, Lucy's Vietnamese Kitchen has added fresh summer rolls to their menu!

Earlier this week we gave our readers the scoop on friends of Lucy's over at Bird's Eye Vietnamese - which received a ton of social media love - so the news couldn't have been unveiled at a more appropriate time.

With their two year anniversary in sight, Sahra Vang Nguyen, one of Lucy's four owners, tells us that it was time to make their fresh summer rolls a Lucy's menu staple, joining the menu with their heavenly pho and bomb banh mis.

The summer rolls provide Lucy's patrons with a lighter option, truly balancing out the menu.

"People have been asking us to expand the menu for a while. As a young business, we wanted to take our time and focus on quality over quantity. Now that we're approaching our second year in March we feel ready for more growth," notes Nguyen.

At only $7, an order includes two summer rolls of which customers can mix and match, choosing from Lucy's usual tofu, smoked brisket, and chicken offerings.

Wrapped in rice paper and filled with vermicelli noodles, cabbage, and thai basil, biting into one of Lucy's summer rolls is so delectably crunchy!

The rolls exude a freshness that rocks so hard in flavor, too, that you might find yourself daydreaming about Lucy's when you're not eating Lucy's.

(I can't be the only one.)

Housemade hoison peanut sauce is served on the side, too, which is perfectly sweet and savory in an addictive sort of way.

Up until now, you could only order their freshly prepared summer rolls from their mobile operation at Smorgasburg.

Coincidentally, Smorgasburg is also where Lucy's first found their fan base, before debuting in 2015 on Irving Avenue.

If you've had the summer rolls at Smorgasburg and then order them now at Lucy's, you'll notice that they've been tweaked, that they have a fuller flavor profile, and that they are more distinctly Lucy's.

Manager Quan Ngo - also co-owner to Bird's Eye Vietnamese -revealed to Bushwick Daily that because Lucy's now prepares their summer rolls within their storefront location, they are finally given proper space and time required to include the lemongrass saute for their tofu and chicken summer rolls, matching their banh mi and pho selections.

If you haven't tried them yet, Bushwick, head on over to Lucy's, snag a seat, and enjoy!

Also, Bushwick Daily would like to wish a big congrats to Lucy's on their two year anniversary - you guys rule!
